I’ve been making this veggie soup for years and it’s a soup recipe I go back to again and again.

Serves: 4-6
Ingredients
2 TBSP avocado oil or Eniva Cooking Oil
¼-½ onion, chopped
3-4 garlic cloves
2-3 large carrots, chopped
1 cup celery, chopped
1 – 28 oz. carton or jar whole peeled tomatoes, drained and cut up
6-8 cups vegetable or chicken broth
2 zucchini, peeled & chopped
1 tsp. oregano
1 tsp. basil
1 tsp. chives
1 tsp. marjoram
Sea salt to taste
4 cups of curly kale, de-stemmed & chopped
Directions
On medium heat, saute onion, garlic cloves, carrots, and celery in oil until vegetables are soft, about 8-9 minutes. Add tomatoes, spices, zucchini, spices, & broth. Simmer for 15-20 minutes.
Add kale and cook for 10 additional minutes.
