I’ll start by saying that I love all things pumpkin. Not just pumpkin spice, ALL things pumpkin. I have fond memories growing up and my Mom making a huge pan of pumpkin bars with cream cheese frosting. Pumpkin bars are still one of my favorite desserts, but my body does not do well with dairy, gluten, or refined sugars.

Gluten Free Pumpkin Bread
This pumpkin bread is light and fluffy instead of super dense like a lot of gluten free baked goods. When I make this I decrease the sugar to ½ cup because we don’t like things super sweet. This recipe uses coconut sugar which is lower glycemic and unrefined.

I can’t even tell you how many times I have made this recipe…A LOT! I love that it has an added vegetable with the carrots and can be sweetened with just bananas. This is a go-to for me during times when I am avoiding sugar. They are great to grab before a workout or as a mid-afternoon snack.
