Lasagna was one of my favorite foods growing up! Really I love anything Italian…spaghetti, pizza, lasagna, etc.
There was nothing more comforting than my Mom pulling out a bubbling pan of lasagna. When I made the shift to eating 100% gluten free, and mostly grain and dairy free, I let go of making one of my favorite things because I hadn’t discovered a good substitute and a way to recreate it.
When we first went gluten free in 2012, there weren’t near as many options for great alternatives as there are now. Companies like Kite Hill and Cappello which are used in this recipe have done a great job of providing alternatives to people who want to avoid gluten, grains, and dairy because of their inflammatory compounds.
You can still eat the foods you LOVE without creating more inflammation in your body, feeling bloated and full, and hindering your fitness and weight loss goals.
