When you massage raw kale, it helps to break down the fibers in order for you to more easily digest it. It’s my absolute favorite way to eat kale… and this is also a great way to increase your intake of leafy greens and cruciferous vegetables.
Did you know there are many different types of kale?
Curly kale is probably the most common and the one you have seen many times in the store. The type of kale I use in this recipe is Lacinato kale, also known as Tuscan or Dinosaur kale. It has flat leaves with the texture of a reptilian hence the nickname dinosaur kale. This is the one I prefer to use for massaged kale salads. It can also be used in soups and stews.
This Fall Harvest Salad with Apple Cider Vinaigrette is bursting with flavor and perfect for using seasonal produce. This salad gives you bursts of sweetness from butternut squash, apple, and dried cranberries. You could add chicken to this salad for a complete source of protein or have it as a side to your upcoming holiday meal. It would also pair great as a side to salmon.
