This chicken blueberry and beet salad was inspired by a recipe in “Meals Made Simple” by Danielle Walker and a restaurant that Justin & I went to every day for lunch while in Arizona several years ago. Up until that trip, I didn’t like to mix my fruits and vegetables and eat fruit on any type of salad. In my mind, those two things were separate!
I have to also credit this salad for my love of beets now.
Beets were the one vegetable that it took me a while to come around to. Once I roasted them with bacon and used them in this salad I was sold!
This is a great time of year to incorporate salads into your supportive nutrition plan because greens like arugula and fruits such as blueberries are fresh and in season. Eating these types of foods is also cooling to the body in the warm summer months.
