Happy New Year!!!
I seem to be having a hard time jumping back into a routine after the holidays. I’m a bit thrown off this week with New Year’s Day falling on a Wednesday making it a short week.
With everything that I have happening this month, I know that planning is going to be key for me. Meal planning, scheduling my workouts & yoga classes AND most importantly scheduling downtime/rest. In order for me to be at my best, I know that I need to move my body, eat whole foods, drink plenty of water, and rest.
In 2018 I never really got back to meal planning and that was something that I was really intentional about in 2019… and something I will continue to be intentional about this coming year. It reduces my stress, I waste less food, and I eat better. To start I am focusing on planning dinners Monday-Friday. Breakfast is usually a protein shake and lunches I either have Origin Meals or leftovers.
I want to share with you my favorite dinner recipes…maybe this is your meal plan for next week!
Kitchen Tools for Easy Meal Prep Dinners
Sometimes all it takes is a simple kitchen gadget or two to help speed up meal prep or cooking times.
These are the easiest way to prep for a busy week! Bake a large batch of your favorite dinner, then either scoop out of the refrigerated casserole dish throughout the week or portion out individual servings and place in the freezer.
Crock Pots and other Slow Cookers are a great way to prep ahead of time! Just load up your ingredients in the pot, then let it cook while you’re away for the day. When you get home, you have dinner ready for you without any additional prep or cooking time! I love this 6 quart digital Crock Pot, it’s the perfect size for having leftovers and allows you to program your cooking time – so it stops cooking and turns to “warm” when ready.
Do you have an Instant Pot yet? If not, I HIGHLY recommend it! The Instant Pot allows you to cook meals in about 70% less time. Meaning you can come home and cook soup that usually takes a few hours in just 30 minutes or less. They come in a few different sizes and have a lot of great pre-programmed features!
I love the 6 quart 7-in-1 multicooker Instant Pot, but they also have an 8 quart which is perfect for large families!

Bacon Cheeseburger Casserole
If you’re short on time to cook during the week, casseroles are a perfect make-ahead option. Make one on a Sunday, then store covered in the refrigerator for the week or portion out and keep individual servings in the freezer until ready to use.
This bacon cheeseburger casserole is one of my all-time favorites! It’s flavorful, very filling, and not too complicated to make. It’s also gluten free and dairy free, and made with my favorite Primal Kitchen Avocado Mayo.

Chocolate in chili? Don’t knock it until you’ve tried it – this might just be my ALL TIME favorite chili recipe. I recommend it all the time to our members at The Transformation Club, and it’s won multiple chili cookoffs!
Cocoa powder adds a slightly sweet taste that helps to balance out the acidity of the tomato broth. It’s all things warm and cozy and perfect for cold winter nights.
This chili is gluten, grain, and dairy free and even Whole30 compliant. If you don’t like cooking on the stove, there are directions for making it in a slow cooker too… so you can put everything together in the morning and leave it until you come home at night!

Taco Lasagna Casserole
Another casserole recipe we love from PaleOMG. This recipe takes popular taco ingredients and layers them with grain free tortillas instead of noodles – it even includes a recipe for dairy free coconut sour cream!

Easy Egg Roll in a Bowl
Not into meal prep but don’t have much time to cook? This easy egg roll in a bowl comes together in less than 30 minutes and is full of all the veggies you need to kick-start your nutrition this year.
This “comfort food turned healthy” is made with ground chicken, but you could always switch it up and use ground pork instead. Best part is, it’s gluten, grain, dairy nut, and egg free! This recipe is also paleo and Whole30 compliant.

Almost 5 Ingredient Pizza Pie
If you’re craving pizza during the week, this is a great alternative and meal-prep option! Rather than traditional pizza, this recipe uses spaghetti squash to make a pizza-like spaghetti squash casserole. It’s one of my personal favorites, too!
