We have been doing a 30-day veggie challenge with our members at The Transformation Club.
Even though we all know that eating more vegetables is good for us, we don’t always do it. That means we need to find easy ways to prepare vegetables and make them taste great!!!
Vegetables are the category of food that gives you the most bang for your buck. They are packed FULL of phytonutrients and antioxidants that help to support our health and fight disease.
When your Mom said, “Eat your vegetables, they are good for you,” she wasn’t kidding!
Ideally, you want to be eating 6-8 servings of vegetables each day. A serving consists of ½ cup or 2 cups of salad greens. I like to focus on eating vegetables that are in season. That way you are getting in variety, what you are eating is fresh & packed with nutrients, and it is more budget-friendly.
To help you expand the types and quantity of vegetables you eat, I thought I would share some of my favorite recipes are either vegetable side dishes or include vegetables in a main dish. All of these recipes will help you to increase your vegetable intake supporting your health & fitness goals.
