National Zucchini Day is tomorrow, August 8th! I know, zucchini has its own day.
This time of year, zucchini is plentiful at farmer’s markets and in people’s gardens. Zucchini is so versatile, can help us lose weight, and also contains many nutrients to benefit our health.
I personally love zucchini because it is easy to digest. If you are someone who experiences gas, bloating, constipation, diarrhea, or any other GI symptoms, zucchini is a wonderful vegetable to eat because it’s easy on the tummy.
Zucchini contains a high amount of vitamin C and significant quantities of potassium, folate, and vitamin A. It also contains a high content of fiber and when eaten regularly, can effectively lower your homocysteine levels.
I mentioned that zucchini is so versatile… here are a few ways you can use it:
- Soup
- Substitute for noodles
- Shredded in meatballs & meatloaves
- Shredded in muffins, bread, and brownies
- Pizza Crust
