Everyone in the midwest loves a good hot dish! If you can tolerate beans, rice, and dairy this is a great hearty option that the whole family will love. Again easy to put together and then put it in the oven and forget about it until dinner time. Leftovers will be great for lunch the next day.

Easy Chicken Enchilada Casserole
The wonderful thing about this casserole is that you get to have the taste of enchiladas without all the work! This is an easy weeknight comfort meal that is in our recipe rotation. I hit the easy button with this and use Siete’s enchilada sauce instead of making my own.

I LOVE fish tacos and most of the time they are breaded with gluten and/or deep fried.
